Meal prep is something that we look at as not so important. Therefor, I want to change that, so...How do I do that?
I need to dig in and prep my meals for the week on Sunday. Did you have a great weekend? I was able to visit with family and just enjoy some downtime. Now it's Sunday and I need to get my meals prepped.
I'm single so I don't make elaborate dishes unless it's something that I can freeze. Even so, I've found that I still need to do some meal prepping so that I not only get my proteins in but also have vegetables easily available.
New Way of Thinking:
Today I had an epiphany. Since starting THM I've realized how unhealthy I was eating. I'm not saying that eating low carb is unhealthy but the way I was eating was unhealthy.
I realized I was so focused on eating high protein and keeping my carbs low that I was neglecting a very important part of a meal. So what was I neglecting? Vegetables! As a gastric bypass person, I need to focus on eating vegetables because I really need the nutrients that they offer.
Why I Need Vegetables:
For me to stay healthy and support my goal weight I need to get enough vitamins and minerals. While doing that, I also have to keep my calorie count low. So eating fresh non-starchy vegetables helps me to do that.
OK, back to meal prepping! I've found it easier to get my veggies in if I cook them ahead of time because I'll already have them cooked. Then all I have to do is add my main source of protein.
What's on the Menu This Week?
This week I made mushrooms, radishes and riced cauliflower. I cooked them in my Power Pressure Cooker XL 10 Qt because it not only saves time, they also taste better! I use chicken, hamburgers, and taco meat made with grass-fed beef for my main protein. The pressure cooker is the best way I can cook these. If you want to save time and have tasty food get a pressure cooker!
